Cuisine in Chad features recipes which are traditionally cooked by the people of Chad. Major parts of the dishes which the people of Chad consume are mishmash of their traditional food. These cuisines are influenced by the customs and tradition that are prevalent in the region. Apart from it, the preferred dishes of the country have also been influenced on a large scale by the history of invasions the country has over the period of time. Cuisine in Chad also involves a long list of food based on fruits and fresh vegetables. These dishes also serve as deserts to the people of Chad.
The traditional cuisines of Chad taste great and require special skill and care to prepare. The most important food among the cuisines of Chad is millet. It is consumed in the whole country in various forms and enjoys the status of been the most preferred food there. Millet finds its way to the plates of Chadian people as a whole grain, as a paste and as balls. The millets balls are however, dipped into different kinds of Chadian sauces before being eaten. This method of enjoying millet is known as aiysh among the Chadian Arabs who live in the north of the country. Again in the south of the country, the very dish is called by the name of biya. Except the difference in name, there is no other difference in the way the dish is consumed in the north and the south of the country.
Apart from millet, another staple food which the people of Chad preferably consume is a type of grain called sorghum. It is also a traditional food of the country and features in the cuisine history of Chad for time immemorial. The people of Chad also like rice as their major food. For the lack of availability, corn and wheat do not stand as an important food of the country.
The people of Chad also consume meat on a large scale. Mutton, beef and chicken are ranked among substantial food of the country and have become an important part of the Chadian cuisine. The northern part of the country is specially noted for highest consumption of cuisines based on meat.
