Cuisine of Ghana also includes an excellent sauce or soup which is saturated with meat, mushrooms. fish and snails.Ghana cuisines vary from place to place i.e from north to the south and from the east to west.The starchy portion which forms the major part of the Food of Ghana are of various types. They are rice, fufu, banku, tuo, gigi, akplidzii, yekeyeke, etew,and ato.Along with this a sauce is a regular feature of their food which is saturated mainly with fish and snails.
Some of the delicious and popular dishes are as follows:
- Cooked rice- This is one of the most common food.
- Waakye - This food is a combination of rice and beans
- Fufu - This product is made from pounded cassava and plantain or pounded cocoyam
- Banku/Akple - This is one of the most delicious dishes. The food is made from corn dough which is cooked and then fermented. Sometimes cassava dough is also used.
- Kenkey/Dokonu - Thie ingredients used are fermented corn and cassava dough, which is wrapped in corn or banana leaves, The product is then cooked into a consistent solid paste
- Kokonte - This is a crispy preparation and is made from dried cassava chips
- Gari - This food is made from cassava.
It is be noted that most of the Ghanaian dishes comprises a stew which is based on tomato with different proteins in it.Among the soups that are consumed the most popular ones are groundnut soup, light soup, palm nut soup and okra soup which is also a popular stew.
The Ghanaian rice and kenkey preparation are served with soup,or stew while on the other hand preparations like banku, fufu, akple and konkonte are served only with soup. A very popular dish among the cuisine of Ghana is the kelewele which is sometimes served with rice and stew. The preparation is sometimes eaten as a dessert.
Among other popular dishes, the kontomire deserves special mention which is made of taro leaves.The food is mixed with tuna and pumpkin seeds and then dressed with palm oil.
